When French Toast Met Pancakes

I love pancakes. I love French toast. This is their love child.

This recipe also freezes well, so no need to waste the leftovers.

When French Toast Met Pancakes


  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • 1.5 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1 teaspoon vanilla
  • 1/2 teaspoons cinnamon
  • 12 slices of thick bread


  1. Beat eggs until fluffy.
  2. Beat in all remaining ingredients except for the bread.
  3. Heat a griddle over medium high heat until a drop of water skitters across the pan.
  4. Dip one slice of bread into the mixture at a time, coating both sides. Place on the griddle and brown one side, then flip and brown the other.
