This chicken Parmesan is easy to make and delicious. The recipe is flexible enough to let you tailor it to your personal tastes.
Slow cooker Chicken Parmesan
Ingredients
- 1 pound boneless chicken breasts
- 1/2 cup plain bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon Kosher salt
- 1 tablespoon olive oil
- 1 egg, beaten
- 4-6 slices of mozzarella cheese
- 1 jar (about 28 ounces) of marinara or spaghetti sauce
Instructions
- Drizzle olive oil over bottom of the crockpot.
- In a medium bowl, beat the egg.
- In a second bowl, mix the bread crumbs, Parmesan cheese, Italian seasoning, black pepper, and salt.
- Cut chicken into strips. This will allow you to get more of the Parmesan coating on them, and will make them easier to eat once cooked.
- Dip each chicken strip in the beaten egg, and then coat with the bread crumb mixture. Make sure the strip is completely coated on both sides.
- Cover bottom of crockpot with chicken slices, then layer mozzarella cheese on top of the chicken. Pour the jar of sauce on top.
- Place lid on crockpot. Cook for 6-7 hours on low, or 3-4 hours on high. Serve over cooked pasta of your choice.
