Fluffy Pancakes

Few things taste as good in the morning as a big fluffy stack of pancakes. This recipe is extra fluffy and especially tasty.

Fluffy Pancakes

Ingredients

  • 2 cups all purpose flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1.5 tablespoons baking powder
  • 1 large egg
  • 2 cups minus one tablespoon milk
  • 2 tablespoons melted butter, cooled slightly
  • 1 tablespoon vanilla extract

Instructions

  1. Mix the dry ingredients with a fork (flour, sugar, salt, baking powder).
  2. In a separate bowl, beat the egg. Add milk, butter, and vanilla. Mix well.
  3. Create a well in the dry ingredients. Slowly pour the liquid ingredients into the dry ingredients. Mix gently. Do not over mix! Batter should be thick and lumpy.
  4. Heat a skillet over medium heat. Lightly brush skillet with oil.
  5. Pour 1/4 cup batter onto skillet. Cook until large bubbles appear and edges appear dry. Flip and cook the other side until golden brown.
  6. Keep pancakes on a wire rack to prevent them from getting soggy while you are cooking.
