Broccoli Cheese Soup

This easy to make soup recipe tastes great and is quick to prepare.

Broccoli Cheese Soup


  • 2 cups chicken broth
  • 1 small onion, diced (or 1 tablespoon dehydrated onion)
  • 1/3 cup all purpose flour
  • 4 tablespoons butter
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 1/2 cups shredded cheddar cheese (about 6 oz)
  • 1/2 cup shredded swiss cheese (about 4 oz)
  • 3 cups steamed broccoli, chopped


  1. In a small covered saucepan, simmer chicken broth and diced onion over medium heat until onions are soft (about 15-20 minutes).
  2. Warm milk in microwave for 1-2 minutes.
  3. In a separate stockpot, melt butter over medium heat.
  4. Add flour, pepper, and salt. Stir constantly for 2 minutes.
  5. Whisk in warmed milk, then heat until soup starts to thicken (5-8 minutes). Stir occasionally.
  6. Add chicken broth from the small saucepan and stir until well blended.
  7. Add cheeses and stir until melted.
  8. Stir in broccoli.
  9. This recipe tastes great fresh or the next day from the refrigerator, but does not freeze well.
